Crumbly Lime Meltaways

Lime Meltaways are simple crumbly cookies that have a fresh citrus taste and are sure to be the perfect treat to bring to a Summer BBQ or Picnic.

When I make Lime Meltaways, I can't help but remember family beach trips during my childhood. Often times my mom would pack Meltaways for a snack on the beach, and they always hit the spot and satisfied my tiny little taste buds. I just can't wait for my first beach day of the Summer!


The recipe I used was from Martha Stewart's Cookies Cookbook.

Lime Meltaways

1 1/2 Sticks unsalted butter, room temperature
1/3 cup confectioners' sugar
Finely grated zest of 2 limes
2 tablespoons fresh lime juice
1 tablespoon pure vanilla extract
1 3/4 cups all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon coarse salt

1. Mix butter and confectioners' sugar in bowl of electric mixer fitted with the whisk attachment, mix
on medium speed until pale and fluffy.
2. Add lime juice, zest, and vanilla, and mix until fluffy
3. Whisk together flour, cornstarch, and salt in a bowl. Add to butter mixture, and mix on low speed just until combined. Be sure not to over mix.
4. Divide dough in half. Place half dough on parchment paper, roll to form a log 1 1/4 inch diameter. Repeat with other half. Refrigerate until cold and firm, at least 1 hour.
5. Preheat oven to 350F. Remove parchment from logs; cut into 1/4-inch-thick rounds. Bake cookies until barely golden, about 13 minutes, rotating sheets halfway through.
6. When done, cool slightly 8 to 10 minutes.
7. While still warm, gently toss cookies with confectioners' sugar in a resealable plastic bag.
